We tapped Gables Delight, one of the most decorated jam makers in the country, to bring her zippy pineapple coconut jam to our rum-spiked vanilla coconut cream for the perfect pina-colada-esque creation (tiny umbrella not included). Bits of fluffy—and gluten-free—vanilla cupcakes complete this iconic dessert. Trade those winter blues for a sun-soaked getaway—no PTO required.
